During an action packed week it can be hard to find time to make a meal. I find that it saves a lot of time to get a fully cooked rotisserie chicken at the beginning of the week because it eliminates a lot of cooking time and you can make so many different things! My go to is usually chicken fried rice but this time I wanted to mix it up.
Lettuce cups are a great way to cut out a lot of carbs in a meal. It gives you a way to hold the contents without adding a lot of substance.
I started by shredding off about 2/3 of a cup of chicken from my rotisserie chicken in the fridge.
I then added in all of the condiments. Mayo, Dijon mustard, sriracha, toasted sesame oil, sesame seeds, salt, and pepper.
Simply stir all the ingredients together in a bowl and scoop into the lettuce cups. Garnish with green onions. For an extra crunch add slivers of celery!
This recipe is easy to make ahead of time and keep in the fridge for a couple days so you can always make more than one serving!
Spicy Asian Chicken Lettuce Cups
2/3 cup of Shredded rotisserie chicken
1 Clove of garlic
1 1/2 tbsp Mayo
1 tsp Dijon mustard
1/2 tsp Sriracha
3/4 tsp Toasted sesame oil
Sprinkle of sesame seeds
Salt & pepper to taste
Garnish: 1 green onion chopped
Optional: 1/4 cup of thinly cut celery
